One of the more popular types of ice cream in Japan is Green Tea ice cream. It is more popularly known as “Maccha” ice cream. When there is a tea ceremony in Japan, Maccha is the tea powder used.
If you should go to any restaurants in Japan chances are you will be served green tea ice cream for dessert. There are times in Japan where the ice cream is served in the middle of what is called a “Monaka” which is a Japanese wafer and bean paste treat.
The rest of the world is only now just catching on and many of the ice cream makers worldwide are making their own recipe for green tea ice cream. Usually when you make the ice cream , an ingredient that is used is matcha tea powder, which has a green color. It is usually made by first cooking the ingredients and then freezing them almost like the manner in which other ice creams are made.
Green tea ice cream recipes have other ingredient such as milk, cream, egg yolks and sugar. When making the ice cream, whether at home or in a business will have their own special recipes and ingredients to give it a special taste and texture.
Some people will favor using vanilla ice cream and blend in a portion of green tea powder.
Here is a recipe for homemade green tea ice cream
You will need:
¾ cup (or 1 pound) sugar
1 cup heavy cream
2 cups milk
15 egg yolk
½ ounce powdered green tea
¼ teaspoon salt
Boil the 2 cups of milk and once they begin to boil remove the heat source. Add the green tea mix and stir well. Using a different bowl the sugar and the egg yolks are to be beaten until a ribbon shape is seen forming. Add the two mixtures together (i.e. the milk mix and the egg yolk mix) and then whisk them continuously so that the eggs do not become too hot. Allow to cook for about a couple of minutes over a medium high heat. When the mixture is about to boil remove it from the heat and let it cool over cold water. At this point you add the cream and put to freeze for a minimum of 2 hours.
This is a basic recipe green tea ice cream recipe and you can surely add you own ingredients and spices to get the flavor you desire.
